Low Gi: Cauliflower Cheese Empty Low Gi: Cauliflower Cheese

No exact measurements here, I just add whatever I want as I go.

Ingredients

  • Creme Freche (Full fat - it goes to runny otherwise)
  • Grated Cheese
  • Cauliflower, cut into florets
  • Seasonings to taste.

Method

  • Start cooking your cauliflower.
  • Heat your creme freche so that is hot enough to melt cheese, although don't allow it to boil for too long.
  • Add grated cheese to taste and gently heat so the cheese melts. You can also add your seasonings here. Mustard goes well in cheese sauce. Don't let it boil once cheese is added!!
  • Drain your cauliflower and place in an oven proof dish.
  • Pour over your cheese sauce and put a little bit more grated cheese on top.
  • Bake in a hot oven (the cooler the oven, the longer it will take) until the cheese on top starts to brown.
  • Remove from the oven and serve.

Variation
When I was a kid, my mum used to make cauli-tuna cheese. Haven't had that in years but it was amazing. Basically, she mixed tuna and tinned tomatoes together and put them at the button of the bowl, and then she would add the cauliflower before pouring over the cheese sauce and topping with extra cheese. She didn't mix the cauli, sauce and tomato/tuna. We used to eat this as a whole meal, not just as a side dish.

I will need to try this. So its a layer of tuna then tomatoes then cauliflower cheese then?
I was going to try cauliflower cheese soup, it was basically cauliflower and laughing cow cheese triangles and a few other simple things

Pretty much. It used to be one of my fave meals. I'd probably put tomatoes before tuna or mix them together, just in case the tuna burns where itsthe driest ingredient

I made this last night and it was really nice. It has the same taste as tuna pasta but without the carbs. I just used a packet of cheese sauce but will do it again with creme fraishe as the cheese sauce was beginning to dry up before the cauliflower was ready. Hubby dosnt like cauliflower or cheese but he likes the tuna and tomatoes so wants to layer it up with onions and peppers etc

Im not keen on tuna either, I can only eat it with mayonaise or a sauce so the tomatoes work well

It is really filling and you can experiment with diffrent ingredients. Think I will eat a lot of this when I get the diet restarted
