Takes time unless you have an ice-cream maker

Ingredients

  • 1 pint of milk
  • 6 egg yolks
  • 3 fl ozs of double cream whisked until slightly thickened but not solid
  • A punnet of strawberries - as ripe and a succulent as you can find - remove stalks and leaves and mash up
  • One teaspoon of vanilla essence

Method

  • Bring milk to the boil and add the yolks and whisk fast
  • Cook very gently stirring while the mixture thickens slightly (should simply coat the back of the spoon lightly)
  • Remove from heat and when cooled add strawberries and cream and mix or whisk together until evenly spread
  • Add vanilla essence at this point if required
  • Now put in the freezer and wait until nearly firm. Remove and whisk again and then re freeze . Repeat this two more times and then re freeze. If you have an ice cream maker, just stick it in there, it won't need repeated whisking.
  • Now ready to eat.
