Low Gi: Italian Chicken Empty Low Gi: Italian Chicken

Ingredients

• 2 chicken pieces per person
• 1/2 red pepper per person
• 1 garlic clove
• 4 chopped spring onions per person
• Rosemary
• Red wine

Method

• Take a large dish and heat up some oil and butter.
• When golden throw in the chicken pieces that you want to eat.
Brown and seal the meat/skin.
• Now add 4 finely chopped spring onions and lower the heat so that it starts to cook slowly.
• Put in one garlic clove crushed and now add red pepper sliced. Add some rosemary and a small glass of red wine.
• Put lid on a cook for about 40 minutes until the chicken is tender and moist.

Variation

If you are happy to increase your carbs add a couple of tomatoes to this recipe at the time that you put in the red peppers. This will make it much more like the original recipe but is much higher in carbs
