Low Gi: Cabbage Lasagne

Low Gi: Cabbage Lasagne
Serves 2-4
Ingredients
• Savoy or other cabbage
• 250g of mince meat
• 4 spring onions
• Garlic
• Salt
• 2 tomatoes
• Herbs
• Grated Parmesan cheese
• Cheese sauce
Method
• First separate the cabbage leaves and boil them lightly in water until the leaves are
slightly soft but do not break. Drain.
• Now make the mince. Fry the chopped onions and add some garlic and salt.
• Add the meat, stir and season with any herbs you like.
• Add the tomatoes chopped and cook until soft.
• Now layer a buttered oven dish with the cabbage leaves and mince and some grated
parmesan.
• You can make a cheese sauce using creme freche and cheese (see cauliflower cheese recipe) and layer over leaves
• Bake in the oven for 30 minutes slowly until nicely cooked through.
